Spinach is one of those vegetables I buy almost every week.

It always feels like a good idea in the moment. It’s healthy, it’s versatile, and it goes with just about everything.

But if I’m being honest, spinach is also one of the vegetables that can quietly start wilting in the fridge if I don’t use it soon enough.

Over the years I’ve learned that the easiest way to waste less spinach isn’t complicated meal planning or trying to cook something elaborate.

It’s just having a few really easy ways to use it throughout the week. Here are some of the simple ways I tend to use spinach before it goes bad.

I Add It to Smoothies

One of the easiest ways I use spinach is blending a handful into a smoothie. Spinach has a really mild flavor, so it disappears pretty easily when blended with fruit.

Some of my favorite combinations are:

• banana and peanut butter
• berries and yogurt
• mango and pineapple

It’s one of those small kitchen habits that makes using up greens almost effortless.

I Toss It Into Eggs

Spinach wilts almost instantly in a warm pan, which makes it perfect for breakfast.

I often add a handful to scrambled eggs or fold it into an omelet. It cooks down quickly and adds a little extra color and freshness to the plate.

It’s also great tucked into breakfast wraps.

I Stir It Into Pasta

This is probably one of the simplest tricks I use during busy weeks.

When I make pasta, I’ll often add a few handfuls of spinach right before serving. The heat from the noodles gently wilts the leaves, and suddenly dinner has some greens without much extra effort. A little olive oil, garlic, lemon, or parmesan and it’s done.

I Use It in Sandwiches and Wraps

Spinach is one of my favorite substitutes for lettuce.

A small handful works well in:

• sandwiches
• wraps
• burgers
• grilled cheese

Because the leaves are soft, they layer nicely into just about anything.

I Add It to Soups and Stir-Fries

Spinach is wonderful in warm dishes because it cooks so quickly.

If I’m making soup or a stir-fry, I’ll often toss a handful of spinach in right at the end of cooking. It wilts in seconds and adds a fresh element to the dish.

A Simple Sauté When It Needs to Be Used Quickly

Sometimes the spinach in my fridge is getting close to the point where it really needs to be used. When that happens, I’ll just sauté it.

A little olive oil, garlic, and a big handful of spinach in a warm pan. It cooks down quickly and makes a simple side dish. Sometimes I add lemon or parmesan on top.

It’s one of the fastest ways I know to use up a lot of spinach at once.

A Small Habit That Helps

One thing that’s helped me waste less spinach over the years is simply keeping it fresh long enough to actually use it.

When greens stay vibrant and easy to grab, I naturally reach for them more often during the week. And most of the time, that’s really all it takes.
